IMPORTANT: READ VERY ATTENTIVE FIRST!!!

1. 1 pack of digestive beat in the fine crumbs and mix with 100 gr melted butter. Use 25 cm sides removable baking tin and press the mix on the bottom very well. Put to the freezer for 20 minutes.
2. 1 lime & 1 lemon (juice&zest), 150 gr sugar and 50 ml water heat in a medium pan on a medium heat till sugar dissolved (do not overheat). Meanwhile soft two sheets of gelatin in a cold water (alternatively use normal gelatin). Do not boil sugar, remove from the heat and add Gelatin, make sure that the sugar mix is not too hot!!! leave to cool down for 10 minutes.
3. 600 gr full fat soft cheese mix well and add to the sugar mix and leave aside.
4. 300 ml single cream whip well, do not over whip, just to set it.
5. Mix cheese mixture and cream very gently with spatula.
6. Add on the top of the digestive and fridge it for 2 hours.

Use sharp knife to cut it !
